Summer is here: Freezing and thawing Mozzarella cheese

When we talk about mozzarella, we always think of  pizzas, tomatoes and pasta. It is indeed associated with beautiful fleshy tomatoes, basil and a drizzle of olive oil. This fresh-baked cheese is originally made from buffalo milk, but it is now easier to find mozzarella with cow’s milk. It takes the form of a slightly flattened ball with fine crust. Mozzarella is found throughout the year. It is marketed in a juice that it is imperative to keep, to keep it longer. In its closed packaging, you can keep the mozzarella with its juice for several weeks. Once started, it will be necessary to taste the cheese within 48 hours.

Freezing mozzarella

If you are afraid of losing mozzarella, you can completely freeze it. It is very easy to freeze a ball of mozzarella to taste it according to your desires. The ideal is to leave it in its packaging intact, with its juice. If you have already started, be sure to keep a maximum of juice to preserve its taste.

You can also freeze it without juice, but cut into pieces. Spread them on a baking sheet lined with parchment paper. Store in the freezer. When the mozzarella pieces are frozen, slide them into a freezer bag or an airtight box. All you have to do is take out the necessary amount of cheese for your preparation.

Thaw mozzarella

When you want to enjoy your mozzarella, you will have to anticipate a bit. It is necessary to take it out of the freezer several hours in advance to allow it time to thaw in the refrigerator. It is not recommended to use the microwave oven to defrost mozzarella as this method will harden the cheese, which will lose its taste.

You can also use frozen mozzarella for easy grating and sprinkle on pasta dishes, pizzas or gratins.

Let it defrost partially to cut it into slices more easily. She will be firmer.
