Q. I held a baby shower at my house for my sister this past weekend, and I have some desserts left over from the party. I know how to store most of the leftovers, like cookies, cupcakes, and cake, but there are a few things I’m unsure how to store. More specifically, I have some of my Aunt’s famous lemon bars leftover that I want to keep for later use. They are my favourite treat, so I want to make sure that I get this right! A. Good news! You can freeze lemon bars, and they should taste just as good after freezing as they do when they’re fresh. The most important part of freezing lemon bars is to make sure they stay moist and don’t dry out. Otherwise, you will end up with dry, crumbly bars that will lose their flavour and texture. By making sure they’re well protected in the freezer, you will also be protecting the integrity of the bars. Also, freeze lemon bars soon after they’re made. The longer they sit out, the drier they get, and you want them to have as much of their original moisture as possible for the freezing process.

How to Freeze Lemon Bars?

To freeze lemon bars, I recommend cutting them into individual serving sizes before freezing. That way it’s easy to simply remove one or two bars at a time, rather than trying to unwrap, cut a slice, and then rewrap the whole tray. Wrap each lemon bar tightly with two layers of plastic wrap, making sure that no part of the bar is exposed to the air. After wrapping the bars, place them in a freezer bag. Remove the excess air, then seal the bag. Label and date it, and then place it in the freezer where the bars won’t get crushed. Lemon bars freeze well for months, but are best if eaten within 6 months of freezing.

How to Defrost Lemon Bars?

To thaw lemon bars, remove the desired number of bars from the freezer and thaw them in the refrigerator for several hours. When thawed fully, they can be eaten as is, or they can be placed in a warm oven for a few minutes to help them regain a bit of a softer texture if they have become too crumbly in the freezer. Eat thawed lemon bars within 2 days of defrosting. Do not refreeze previously frozen lemon bars, particularly if your lemon bars have been made with condensed milk.
